Albanian baked lamb with rice (Tavë kosi)

  • 70g/2½oz butter
  • 1 tbsp olive oil
  • 1.2kg/2lb 12oz boned lamb shoulder, cut into 5cm/2in cubes
  • 4 garlic cloves, grated
  • 1 tsp dried oregano
  • 60g/2¼oz long-grain rice, rinsed
  • 50g/1¾oz plain flour
  • 600ml/20fl oz Greek-style yoghurt
  • 4 free-range eggs, beaten
  • freshly grated nutmeg, to finish
  • salt and freshly ground black pepper
Preheat the oven to 180C/160C Fan/Gas 4.
Heat 20g/¾oz of the butter and the olive oil in a large lidded pan over a high heat. Brown the lamb in batches.
Return all the lamb to the pan. Add the garlic, oregano and 200ml/7fl oz water. Bring to a simmer and cook, covered with a lid, for about 45–60 minutes until the lamb is tender.
Stir in the rice, and season with salt and pepper. Transfer to a 3 litre/5¼ pint earthenware or other ovenproof dish.
Melt the remaining butter in a small saucepan, add the flour and make a roux, cook for 2 minutes, then take off the heat. Add the yoghurt and mix well, then return to the heat and cook gently for a couple of minutes. Take off the heat, add the beaten eggs and season with salt and pepper.
Pour the sauce over the lamb and rice mixture, grate fresh nutmeg on top and bake for 40–45 minutes until starting to turn golden-brown.
Remove from the oven and allow to sit for 5 minutes before serving. Serve with a simple lettuce salad. Enjoy !

Albanian Recipe Ingredients
  • 12 oz okra, fresh or frozen
  • 2 med green peppers, diced
  • 2 cup celery, diced
  • 4 oz onion, diced
  • 4 cloves garlic, pressed
  • salt and pepper, to taste
  • ½ cup water
  • 1 lb roasted lamb, in bite size cubes
  • ¼ tsp thyme
  • paprika
  • grated lemon rind
Albanian Recipe Instructions

Cook okra until liquid evaporated in skillet or Microwave dish, stirring occasionally for 5 minutes.
Add green pepper, celery, Onion, garlic, salt and pepper to taste.
Cook for 10 minutes.
Stir to prevent vegetables from sticking.
Add water, Lamb and thyme and simmer, covered, over Low heat for 20 minutes until heated through.
Sprinkle with paprika and garnish with lemon rind. Enjoy !

  • 3 tbl salad oil
  • 7 cup (about 3-1/2 pounds) drained sauerkraut
  • 1 tbl paprika
  • 2 tsp caraway seeds
  • 6 lb Roasting Chicken
  • salt and pepper as desired

Here's another recipe which is a great favorite of ours, and which I clipped from a newspaper (Washington Post?) about 15 years ago. It's called
"Albanian Chicken", although I've never seen an Albanian Cookbook, and have never seen another Albanian recipe, it seems like something my great grandmother would have cooked. The use of sauerkraut as a stuffing seems weird, but is characteristic of Middle European cooking. You often find it mixed with it's mixed with paprika and caraway seeds. The stuffing is sensationally delicious, and the Chicken comes out extremely tender, every time. This is a recipe you have to cook to understand.
Saute Onion in oil until golden, stirring often. Combine sauerkraut, paprika, and caraway seeds with Onion. Spoon as much kraut mixture as possible into the body cavity of the Chicken. Reserve remainder of kraut for later
Place Chicken on roasting rack in a shallow roasting pan. Bake at 325 degrees for 1-1/2 hours. Remove pan from oven, take Chicken out. Pour off fat in bottom of pan. Spread remaining kraut in bottom of pan and set Chicken in pan. Bake another 1/2 to 1 hour to brown. Season as desired.
Leftovers make great sliced Chicken and sauerkraut sandwiches. Enjoy !

Albanian Recipe Ingredients:
  • 3 lg. cucumbers
  • 2 qts. buttermilk
  • 1 to 2 cloves garlic
  • Salt to taste
Albanian Recipe Instructions:
Skin and cut up cucumbers. Cut into bite size pieces. Put in large bowl. Crush garlic. Add to cucumbers. Pour in buttermilk. Mix thoroughly (more garlic may be added, if you wish). Salt to taste. Keep refrigerated. Serve cold. Enjoy it !

Veal or Chicken with Walnuts (Gjellë me Arra)

Albanian Recipes Ingredients:
2 tablespoons flour
  • 15 finely crushed shelled walnuts
  • 2 beaten egg yokes
  • 1 minced garlic clove
  • 1/4 lb. sticks butter
  • 2-3 lbs of Veal or Chicken meat cut up in 1" cubes
Albanian Recipe Instructions:
Place the meat or chicken in a saucepan and cook over medium heat until tender. Then remove the meat setting it aside in a dish while leaving the remaining juices in the saucepan. In another saucepan, add the flour and sauté over heat until it becomes light brown in color (do not overcook!) and add the half a stick of butter. Then, add the finely crushed walnuts, minced garlic clove, and the two egg yokes, stirring constantly. Add the juices from the other saucepan and sauté until all the ingredients thicken. Immediately remove from the heat to avoid solidifying the egg yolks. Then fold in either the meat or chicken. Pan fry the remaining half stick of butter until brown and pour over the four servings. Albanian Recipe: Fried Meatballs : Qofte të fërguara

Albanian Recipe Ingredients:
  • 1 lb ground meat
  • 1 slice stale bread
  • 1 small onion, finely-grated
  • 2 tablespoons chopped Feta cheese
  • 2 tablespoons bread crumbs
  • 2 tablespoons oil or melted butter
  • 1 tablespoon chopped parsley
  • Salt
  • Pepper
  • Mint
  • Oregano
  • 1 cup flour
  • 1 cup oil (olive oil recommended)
Albanian Recipe Instructions:

Soak bread in water and squeeze hard to drain. Add ground meat, bread crumbs, oil or melted butter, onion, parsley, salt, pepper, and mint. Mix thoroughly, and form into 1-inch thick patties, sprinkle with salt, pepper, and oregano. Roll in flour and fry in hot oil. Serve hot with French Fries or mashed potatoes.

Albanian Recipe : Bean Yahni Soup : Jani me Fasule

Albanian Recipe Ingredients:
  • 2 cups of dry white beans
  • 1/2 cup chopped onion
  • 1/2 cup olive oil
  • 2 tablespoons tomato sauce
  • 1 tablespoon chopped parsley
  • 1 tablespoon chopped mint
  • salt, chili powder
Albanian Recipe Instructions:

Boil beans in hot water in an uncovered pot for 5 minutes. Rinse and boil for another 15 minutes in a covered stock pot in 3 cups hot water. Sauté onion in olive oil until it turns yellow. Add 2 tablespoons bean stock from the pot along with tomato sauce, parsley, salt and chili powder for taste. Cook for 10 minutes or until a thick sauce is formed, then pour everything into the pot. Add chopped mint, cover tightly and cool for 2 hours over low heat, or for 30 minutes in a pressure cooker. This should produce a thick juice, covering beans by _ inch. Serve hot.
